Le fait que les salarie\u0301s de tout CSE puissent venir s\u2019y restaurer nous permet d\u2019augmenter le revenu du restaurant, et d\u2019avoir ainsi une offre de qualite\u0301. En effet chaque convive qui fre\u0301quente le restaurant participe au financement de celui- ci par le biais du subventionnement qu\u2019accorde l\u2019entreprise, qu\u2019il soit de notre pe\u0301rime\u0300tre (CSE Lignes), ou pas.<\/p>\n<p>Depuis des anne\u0301es, le CSE Lignes a choisi de faire une restauration de qualite\u0301 afin d\u2019avoir la main sur l\u2019offre de restauration gra\u0302ce a\u0300 la subvention du restaurant.<\/p>\n<p>Bien que notre population soit nomade et fre\u0301quente tre\u0300s peu notre restaurant, la fre\u0301quentation de celui-ci nous permet d\u2019utiliser a\u0300 plein notre subvention et d\u2019offrir une restauration estime\u0301e de qualite\u0301.<\/p>\n<p>Aujourd\u2019hui, chaque jour, plus de 2 000 repas sont servis le midi et 300 le soir.<\/p>\n<p>En revanche, le temps d\u2019attente pour trouver une place reste trop long. Il y a 650 places assises pour 2 000 repas servis donc une place doit servir 3 fois. Une campagne d\u2019information est a\u0300 l\u2019e\u0301tude pour sensibiliser les convives.<\/p>\n<h2>Pourquoi un seul passage par jour ?<\/h2>\n<p>Une re\u0300gle URSSAF limite a\u0300 un passage\/jour au restaurant d\u2019entreprise. Le minimum URSSAF par plateau est de 2,76 \u20ac.<\/p>\n<h2>Qu\u2019en est-il co\u0302te\u0301 hygie\u0300ne ?<\/h2>\n<p>Une hygie\u0301niste (Socie\u0301te\u0301 Eliot) intervient dans les locaux 4 jours par semaine. Tous les espaces de restauration de la cite\u0301 sont concerne\u0301s. Une formation du personnel est pre\u0301vue tous les 2 ans. Les analyses bacte\u0301riologiques sont faites par le restaurant et tout ce qui est produit sur place est garde\u0301 une semaine en e\u0301chantillon de 100g au frigo. Si plus de 3 personnes malades tombent malades, une enque\u0302te est ordonne\u0301e par le me\u0301dical AF.<\/p>\n<p>&nbsp;<\/p>\n<div class=\"page\" title=\"Page 2\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<h2>Pourquoi la qualite\u0301 n\u2019est pas la me\u0302me a\u0300 Orly (Sheds) ?<\/h2>\n<p>Car la gestion a e\u0301te\u0301 donne\u0301e a\u0300 Elior. Le CSE Lignes n\u2019a pas son mot a\u0300 dire (qualite\u0301 infe\u0301rieure, recherche du meilleur prix).<\/p>\n<h2>Le restaurant du CSELignes, c\u2019est :<\/h2>\n<ul>\n<li>\n<p>&#8211; \u00a039 salarie\u0301s dont 14 cuisiniers et 3 magasiniers.<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a090 % de produits frais,<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a080 kg a\u0300 100 kg de poisson frais par jour et environ 200 kg de viande\/jour<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0450 kg de le\u0301gumes par jour<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a050 kg de riz\/jour.<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0Mise en place d\u2019un pre\u0301sentoir \u00ab BIO \u00bb<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0Des ingre\u0301dients et fournisseurs 100 % franc\u0327ais, Label rouge \/ Bleu Blanc c\u0153ur. Pre\u0301fe\u0301rence de travailler avec les fournisseurs de la re\u0301gion.<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0L\u2019huile d\u2019olive est de plus en plus privile\u0301gie\u0301e par rapport au beurre<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a011 a\u0300 12 plats propose\u0301s par jour<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0Tri se\u0301lectif concernant les de\u0301chets mis en place<\/p>\n<\/li>\n<li>\n<p>&#8211; \u00a0Passer a\u0300 0 % plastique et 100 % biode\u0301gradable<\/p>\n<\/li>\n<\/ul>\n<h2>Pour l\u2019UNPNC :<\/h2>\n<p>Nous tenons a\u0300 remercier le Directeur du restaurant et son e\u0301quipe pour le travail effectue\u0301 tout au long de l\u2019anne\u0301e ainsi que le CSELignes pour l\u2019aide qu\u2019il apporte au directeur.<\/p>\n<p>Le restaurant du personnel offre une cuisine collective mais traditionnelle car tous les plats sont faits sur place.<\/p>\n<p>Malgre\u0301 tout, force est de constater que le mate\u0301riel est ve\u0301tuste et qu\u2019il faut le renouveler.<\/p>\n<p>De plus, a\u0300 la suite d\u2019une malfac\u0327on reconnue par les assurances, la dalle du restaurant doit e\u0302tre refaite. En conse\u0301quence, la fermeture du restaurant et d\u2019une grande partie de la cafe\u0301te\u0301ria devrait intervenir prochainement.<\/p>\n<p>Quid de la suite ?
